LOW CARB TACO TUESDAY
Love tacos but not the carbs?! There’s no need to miss out on Taco Tuesday’s! or any other taco nights! There are countless ways to cut the carbs for taco nights! We’ve been really into making taco salads for the past few weeks, which cures my taco hankering, BUT if you’re yearning for more of an actual taco, I’ve gotcha covered on that too!
First, let’s go with the taco salad. There are so many possibilities! Ground beef, chicken, or steak. Take your pick! OR do a combo of protein. Choose your lettuce. I prefer romaine, because it has a nice crunch to it. Then pick your toppings. BAM. That easy for a nice, filling taco salad. My favorite toppings are home made pico (yellow or purple onion, roma tomato, cilantro, lime juice, & salt) , avocado chunks or guac ( you can easily make home made guac with the left over pico ingredients) a little sour cream, and some cheese! Below is a shopping list and a broken down recipe to follow for the perfect taco salad.
Taco Salad Step by Step:
- Grab a nice big salad bowl.
- Add your lettuce of choice.
- Throw in your meat of choice.
- Add your delicious homemade pico.
- Avocado or guac.
- A dollop of sour cream.
- Sprinkle cheese.
- Black Olives.
- Jalapeño.
- and YUM. Enjoy

- Lettuce
- Protein of choice
- 2 roma tomatoes
- 1 yellow or purple onion
- 1 or 2 avocados
- Cilantro
- 1 lime
- Salt
- Sour cream
- Cheese of choice.
- Black olives.

Low carb tacos! Low carb tacos? What about the shell?! Well, the shell for these low carb tacos… drum roll please! CHEESE! Yes, cheese! We used Folios cheese wraps for the shell. It’s not a crispy wrap, but there are ways to make it crispy from a crunchy taco, but we left them as is for a soft taco. They turned out delicious! The wraps are a little high in calories so I just used one for one taco and then did a small fajita style salad on the side! (basically a shell-less taco). It was a successful taco night for sure and we will be using them again to make tacos! We plan on trying to crisp them up by heating them and then letting it cool in a taco shell shaper! I’ll let you guys know how they turn out! Below is a step by step to set up the perfect low carb taco along with a shopping list.
Low Carb Taco Step by Step:
- Take your Folios cheese wrap
- Add your protein of choice.
- Layer your toppings.
- Avocado or Guac.
- Homemade Pico.
- Lettuce.
- Sour cream.

- Cheese Folios (found on amazon, at Publix or Trader Joe’s
- Meat of Choice.
- Lettuce.
- 2 roma tomatoes.
- 1 or 2 avocados.
- 1 Lime.
- Sour cream.
- Cilantro.
- 1 red & 1 green bell pepper.
- 1 Yellow or purple onion.
