LOW CARB PUMPKIN SPICE BITES

HELLLLOOOOO October! It’s my favorite month! Fall colors start to show up in the leaves, weather is cooling down, fall scented things are in full swing and Halloween! 

If you’re like me, then all the cute pumpkin and halloween things draw you in. Which is exactly what happned when I was browsing the halloween isles at Target and saw the cutest silicone baking mold! Of course it’s Jack-O-Lantern! So, I grabbed it and got super excited with all the halloween treats I can make using it!

So, this morning I did my first Jack-O-Lantern baking with the baking mold and they turned out SUUUUPER cute and delicious! They’re quick and easy and you can easily make several batches to store in the fridge for a grab and go breakfast for the week!

Here’s what you’ll need:

  • 2 EGGS
  • CREAM CHEESE
  • BUTTER
  • COCONUT FLOUR
  • LIQUID STEVIA
  • PUMPKIN PUREE
  • PUMPKIN PIE SPICE
  • CINNAMON
  • BAKING POWDER
  • CHOCOLATE CHIPS (STEVIA SWEETENED)
  • VANILLA EXTRACT
  • SILICONE BAKING MOLD

First things first, pre-heat your oven to 350 degrees and get out all of your ingredients. 

Take your butter and semi-melt it, then take your cream cheese and melt it down a little with the butter. Whisk them both together until creamy. Then add your 2 eggs and whisk.

Once your eggs are whisked in, add 20 grams of pumpkin puree, 7 grams of coconut flour, and 1tsp of baking powder. Whisk until smooth.

Now for the last few things, I heavy handedly sprinkle cinnamon and pumpkin pie spice to make sure the flavors come through. You can start with a teaspoon and add more to the taste you desire. Then add a teaspoon of vanilla extract and 2 droppers of liquid stevia, you can add more for a sweeter taste. Last but not least, chocolate chips! I used Choc Zero to keep it sugar free! Lily’s is also another good option! I wait to add them in after the mixture is in the baking pan.

Once all your ingredients are combined, take the mixture and pour into a measuring cup to make it easier to pour into the silicone baking mold. Pour mixture into the mold about 1/3 of the way to leave room for them to rise. Then add the chocolate chips, I do this to ensure that each one has an even amount of chocolate chips!

Bake for 15 min on 350, but periodically check with a tooth pick to make sure they don’t over cook! Once they’re done, let them cool for a minute and then flip the baking mold over and they come right out! Enjoy them with your favorite breakfast sides or even use them as the side! These Keto Pumpkin Spice bites are even great for a little late night sweet tooth hankering!
