H A P P Y M O N D A Y Â my beautiful friends! I’ve been trying to get back into a blogging routine again, after taking a little break from blogmas and posting a blog every day in December! It kind of burnt me out, but was also fun! BUTTTT I’ve been slacking in finding the motivation to open up my computer to write. So, its time to get into the blogging groove again!
I’ve been in the health and fitness world for a while now and have a lot of knowledge about food and diets. I get the same questions frequently; What do I eat? What can I eat that’s healthy? How do you have time to prep your meals? That last one always made/makes me laugh because, I work 3 jobs and I can find the time to work out and prep my meals, then you can too. Its a matter of you really wanting to put in the time and effort to do it! The time it takes you do drive to Chick-fil-a or sit and wait on that pizza you ordered to be delivered, you could of been prepping wholesome, nutrient dense meals for the week! And for “healthy” meals, don’t complicate things. Keep it simple.
Below are some nutrient dense meals that are perfect for prepping so that you can just grab your meal without having to worry about cooking every s i n g l e day! AND they’re DELICIOUS! Â
MEAL IDEAS FOR HEALTHY MEAL PREPPING:
Baked Chicken Nuggets and Sweet Potato FriesÂ
These are sooooo good! A new staple in my weekly meal prep! Â Making the swap for Primal Kitchen Ketchup vs regular ketchup is a game changer as well! Check those added sugars in regular ketchup and I guarantee you’ll be running to the store for Primal kitchen! Click here for my chicken nugget recipe!
Chicken and Shrimp with Spaghetti Squash “Pasta”
If you want to keep the carbs lower for a meal or to add more volume for less carb and calories, using spaghetti squash instead of pasta is perfect! Add your protein ( I choose shrimp and chicken thighs for this meal shown) then add your favorite pasta sauce! I used Primal Kitchen Roasted Garlic. I highly recommend Primal kitchen for your sauces and condiments! They’re clean ingredients and taste amazing!
Buffalo Chicken Wrap
Who doesn’t love a good wrap?! Lately I’ve been obsessed with buffalo sauce and yes you guessed it, Primal Kitchens buffalo sauce lol. I’ve been putting it on literally everything! It’s even amazing on the chicken nuggets mentioned earlier in the post! For this wrap I used Boards Head Buffalo Chicken, Trader Joe’s Reduced Guilt Guac, some rotisserie chicken, and then topped with Primal Kitchen Buffalo sauce.Â
Now for some breakfast ideas, bcuz you can’t forget a good breakfast!

Kodiak Cakes Pancakes
Super delish, still a little more calorie dense, but hey, they’re pancakes and you need to enjoy some good pancakes every now and then! These are a super yummy swap for something like Bisquick. Top with half a banana and used ChocZero maple syrup! 😋Â
Eggs, Peppers, and Waffle Open Faced SandwichÂ
Super easy to make and delicious! Prepping peppers is easy and you can use then with all kinds of different meal ideas! For this bad boy, scramble 2 eggs, toast a Vans multi-grain waffle, and throw on your peppers! YUM!
There ya have it! Some easy and yummy meal ideas that can easily be prepped and put into containers that you can just grab and heat up or grab and go for all my on-the-go peeps!Â
