Two words. Chicken. Nuggets. Who doesnt love chicken nuggets?! Chicken nuggets are lifeeeeee and always a go to! Okay Syd, how many times can you say chicken nuggets in the first few sentences lololol.
Today I’m sharing with you one of my new favorite recipes for delicious chicken nuggets! These bad boys are also, Whole 30, gluten free, and paleo for those of you following any of those ways of eating!
You can make them into larger nugget size for meals or make them into popper size for any party or gather occasion! Making them into chicken nugget poppers would be great for the Super Bowl coming up!
OK, lets get to the recipe because that’s what you’re here for, right!?
INGREDIENTS FOR THE HEALTHY CHICKEN NUGGETS
GROUND CHICKEN. I use the 98% lean ground chicken. You can also use ground turkey for these as well!
SWEET POTATO. (OPTIONAL) This is totally optional, the ones shown I did use sweet potato, but won’t add it again. I’d rather use sweet potatoes for sweet pot fries!
COCONUT FLOUR. Any brand will work for this!
COCONUT OIL. Bringing some heathy fats to the party! I like the spectrum brand, it has the best flavor to me!
GARLIC POWDER, ONION POWDER, SALT, PEPPER, EBTB SEASONING. You can add any other seasoning your heart desires! You can keep it simple or spice it up!
INGREDIENTS:
1lb ground chicken or turkey
1.5 cups grated sweet potato (OPTIONAL)
2 tbsp coconut four
2 tbsp coconut oil (be sure to melt before adding to the rest of your ingredients)
Add to taste of the following: (I add a lot because I like a stronger seasoned flavor) garlic powder, onion powder, onion flakes, EBTB seasoning, black pepper, salt.
HOW TO MAKE THE HEALTHY CHICKEN NUGGETS
Pre-heat your over to 400 F and line a baking sheet with aluminum foil and spray with Primal Kitchen avocado oil spray.
If you choose to add the sweet potatoes to your nuggets, shred your sweet potato using a cheese grater.
Add all ingredients into a mixing bowl and combine well.
Depending on occasion or preference, roll out nugget size or popper size nuggets, place them onto your baking sheet and slightly flatten.
Place in over for 25 minutes, flip your nuggets half way through to get a nice crisp finish on both sides!
Allow to cool and enjoy with your favorite nugget dipping sauces! I love using Primal Kitchen ketchup, buffalo sauce, and BBQ sauce! For poppers, a great addition would be some freshly made guac to dip these in!
