Crustless Keto Quiche

Who doesn’t love a good quiche?! It’s a Sunday brunch classic with endless possibilities for a mouth watering dish.

I’ve been practicing a ketogenic way of eating for almost a year now and its been fun experimenting with different ways of making my favorite foods fit into the keto lifestyle.

So, let’s get into it. Quiche. Since the main ingredients are eggs and cheese, it’s already full of healthy fats, so it isn’t hard to make a quiche keto friendly. I love keeping things simple, while also having lots of flavor.

For this quiche creation you’ll need:

  • 12 eggs
  • 1 shallot
  • Cheddar & Gruyere cheese
  • Heavy Cream
  • Bacon
  • Garlic powder, salt, pepper
  • Unrefined coconut oil
  • Green onion for garnish

Kitchen utensils needed:

  • Pyrex pie glass
  • Knife or onion chopper
  • Cutting board
  • Whisk
  • Mixing bowls
  • Stove top griddle

Instructions:

  1. Cook bacon and set aside.
  2. Pre-heat oven to 350°F.
  3. Chop your shallot into minced size pieces and grate however much of both cheeses and set aside.
  4. Whisk 12 eggs in mixing bowl until all scrambled.
  5. Add the chopped shallot and season eggs with garlic powder, salt, and pepper to your liking.
  6. Pour in 1/4c heavy cream.
  7. Oil pie pan with coconut oil and pour in egg mixture.
  8. Crumble your bacon through out the quiche and then sprinkle your cheeses in top.
  9. Bake for about 20min at 350°F or until quiche is cooked throughout.
  10. Garnish with your green onion and enjoy!
